Nowadays people use a variety of foods and weight loss products to lose weight.
It may or may not benefit them, but it costs a lot of money and spoils their mind. If this is happening to you also, then you should use nachni flour. It is also called Nachni or Finger Millet. Dancing flour is a very healthy option that is rich in nutrients.
It is rich in fiber, calcium, protein, vitamins, potassium, and iron. Eating nachni helps in weight loss and people suffering from diabetes and iron deficiency should eat nachni flour.
Below are some recipes that you can make that are as delicious as they are healthy.
Ragi Idli
This idli is as delicious as it is nutritious. It is made by mixing nachni flour, rice, and urad dal. It is also very easy to make.
Ingredients of Nachni Idli-
1 cup idli rice
cup uddi dal
1/4 cup poha or 20 to 25 grams rice
tablespoon fenugreek seeds
1 cup nachni flour
Water
rock salt as per taste
Nachni Idli food-
First of all, put the rice in a vessel and wash it well. Then add 1 to 1.5 cups of water and keep it aside.
Now wash and mix well, cover, and leave for 4 to 5 hours.
In another bowl add urad dal and fenugreek seeds.
Wash the pulses twice and soak 2 fenugreek seeds in 1 cup of water for 4 to 5 hours.
After about 4 to 5 hours, put the urad dal in the grinder box.
Finely chop the urad dal and fenugreek seeds till they become soft and smooth.
Add some water while grinding. Then take out the urad dal paste from the pan.
Peel a squash, grate it and squeeze out the juice.
Add some water while grinding.
Put the rice paste in the box containing the urad dal paste.
Then mix both the batteries well.
Now add 1 cup of all-purpose flour and half a cup of water to it.
Now mix well with a spoon or by hand.
It takes some effort to mix the Nachni flour in the Idli pot.
Cover the cup with a lid and let it rise overnight or for 8 to 9 hours.
You will see that the amount of battery will double.
If the quantity of flour is not increasing, then add one teaspoon of baking soda to the flour.
mix well. Add salt.
Now take the idli mold and grease it with oil.
Pour all-purpose flour into the idli mold and add 2 to 2.5 cups of water to the electric cooker or steamer or pressure cooker before placing the idli stand.
Boil this water and place the mold in an electric cooker or steamer and cover it with a lid.
Cook the idlis in steam for 12 to 15 minutes.
Meanwhile, keep checking the idlis. You test it with a toothpick. It should be clean and not sticky.
Angry idlis can be boiled in batches.
Serve idli with coconut chutney and sambar.
Can also be given to babies with a mixture of coconut milk and jaggery.
Ragi Dosa
Ragi dosa is actually a healthy variation of dhosa, which can be made with the help of ragi flour. This is a quick recipe.
Ingredients of Ragi Dosa-
1 cup ragi flour
1/4 cup gram flour or rice flour
cup finely chopped onion
tsp finely chopped ginger
tsp chopped green chilies
8 to 10 curry leaves - chopped
chopped coriander
tsp cumin
1 pinch asafoetida - optional
3 tbsp fresh grated coconut
Half a cup of buttermilk
1.5 cups water or as required
salt as required
Oil or Ghee for cooking as required
Method of Ragi Dosa-
Take ragi flour and gram flour in a bowl. You can also use rice flour instead of gram flour.
Now add finely chopped onion, ginger, curry leaves, green chilies, coriander leaves, asafoetida, cumin, grated coconut, and salt as per taste.
Also, add buttermilk and 1.5 cups of water to it.
Mix the batter very well.
Cover the batter and keep it for 15-20 minutes.
After this, heat a tawa or wok on medium heat. Put some oil on the pan.
Now take some batter in a ladle and spread it on the pan.
Now let the base cook so that it becomes crispy.
Now, sprinkle some oil on top. Also, sprinkle a few drops of oil on the sides of the dosa as well.
When the dosa turns golden and crisp from the bottom, flip it and cook from the other side as well.
Cook till crisp and well cooked from both sides. Similarly, make all the dosas.
Serve the dosa hot.
If you want, you can also make masala dosa by adding potato masala or dry vegetables to it.
Serve it with sambar or coconut chutney.
