1. Khajur barfi recipe

Material

Dates - 2 cups

Ghee - 2 tbsp

Almonds - cup

Pistachios - 1/2 cup

Cardamom powder - 1/2 tsp

oil to grease

Method

First of all, we will start by removing the seeds from the date palm. On a chopping board, cut all the dates and keep them aside. After this, chop almonds and pistachios.

Put dates, almonds, and pistachios in a bowl. Add ghee and knead soft dough. Take a rectangular dish and pour the dough into the dish. Spread it evenly. Let this mixture set. Cut the barfi into pieces and serve.

2. khajur milk

material

Milk - 2 cups

Fresh dates – 5-8

Method

Wash and peel the dates and remove the seeds. Cut them into small pieces so that they are easy to drink or eat. Add chopped dates to boiling milk and boil for 15-20 minutes. Halve the milk. You can also make it with dried dates, but you need to soak it in water for an hour beforehand.

3. Date pudding

material

Dates (peeled and chopped) - 1 cup

Ghee - 1/3 cup

Sugar - 2 tbsp

Hot water - 1/2 cup

Cardamom powder - 1/4 tsp

Cashew nuts (broken) - 1 tbsp

Method The date palm should be seedless. Cut it roughly. Measure out 1 cup and transfer to a bowl.

Add hot water. Keep aside covered for 30 minutes. Make sure that the dates are completely soaked in water. Now it must have become soft. Now put it in a mixer jar and grind it finely.

Put the date puree in a thick-bottomed pan. Add sugar to it. Keep cooking till it starts turning dark in color and thickens a bit. Start adding ghee to it. Add 1 or 2 teaspoons of ghee at a time. Add ghee little by little and keep cooking.

Keep cooking on low flame and keep adding ghee in between and when the halwa starts sticking, the halwa will absorb the ghee. When ghee leaves the edges, add cardamom powder. Add one tsp ghee and fry cashews till golden brown. Put in the pudding. Stir quickly and switch off the flame.

4. Date laddus

material

Dates (seeded) - 1 cup

Cashews, pistachios, almonds, raisins, walnuts – cup

Dry coconut - 1 tbsp

Vanilla essence - ¼ tsp

Ghee - 1 tbsp

Method

Heat a pan and add dry fruits and fry for 2 minutes. Put the roasted dry fruits in the mixer and grind them to a coarse paste by running the mixer just once.

Take dates in a pan and fry the dates till they become soft.

Take out the dates in a mixer jar and run the mixer only once or twice and grind them coarsely.

Take out the ground dry fruits and dates in a mixing bowl. Add ghee, dry coconut, and vanilla essence and mix well.

Mix all the ingredients. Make small lemon-sized balls from the date mixture. Store them in an airtight container and enjoy healthy laddus for weeks.

5. Date chutney

material

Dates - 100 grams

Red Chili Powder - ½ tsp

Cumin Powder - ½ tsp

Finely chopped dried fruits

Black salt - 1/4 tsp

salt to taste

Method

Remove and wash the date palm seeds. Now soak the dates. Soak them in two cups of water for about two hours. After this, take them in a vessel and cook them for 5-7 minutes.

After cooking, grind finely in a mixer and add red chili powder, cumin powder, dry fruits and black and white salt. Dates chutney is ready. Serve it with parathas, samosas or any namkeen.

Date chutney can be used for a few days.

6. Dates cake

material

Dates - 1 cup

Dates coarsely chopped - 6

Water - 1 cup

Butter - 6 tbsp

Sugar - 1 cup

Eggs - 2

All-purpose flour - 1.5 cups

Baking soda - ½ tsp

Baking powder - 2 tsp

Vanilla essence - 1 tsp

Method

Boil 1 cup of dates with 1 cup of water until the dates become soft and pulpy. This may take around 2-3 minutes. Make a smooth paste out of it. Keep aside to cool completely.

Beat together margarine and sugar until light and cushy.

Add eggs and beat until creamy.

Add date paste and mix well.

Sift the baking powder, baking soda together with the flour. Add this flour little by little to the date batter. Mix gently with a spatula. Add vanilla essence and chopped dates. Pour this batter into a greased cake pan.

Bake in preheated oven to 180°C for about 40 to 50 minutes until a toothpick inserted comes out clean. Dates Cake is ready.

7. Date Payasam

Material

Dates - 1 cup

Milk - 2 cups

Water - 1 1/2 cups

Cashew - 12

Raisins - 6

Cardamom powder - 1/2 tsp

Ghee - 2 tsp

Method

Finely chop the dates. Put milk in a pan and let it boil on a low flame.

Heat ghee in a separate pan. Add chopped dates and fry for a minute. Remove and keep aside. Add cashews and raisins to the pan. Fry till golden brown.

Add the required amount of water to the dates and cook till they are completely mashed. Add boiled milk and boil till it thickens.

Add cardamom powder and simmered dry natural products to it. Let the kheer simmer on a low flame for another 5 to 10 minutes, till the kheer thickens. Remove it and serve at room temperature or chilled.

Homemade Ghee Recipe

What is the need of running the market for the things which we can get in pure form at home?

The same is the case with ghee. By making ghee at home, you can get rid of adulterated or impure ghee.

For this, all you have to do is collect the cream that comes out of milk in a vessel for 12-15 days and keep it in the fridge. In 12-15 days, take out this vessel and keep it at normal temperature for at least 4-6 hours.

Now you have two ways to make ghee from cream, which you can adopt. The first method is to remove ghee directly from the cream and the second method is to remove the butter first from the cream and then to extract the ghee from it. You can follow the process of extracting ghee at your convenience. In both the process, you are going to get pure ghee.

Method 1: Extracting ghee directly from cream

To extract ghee directly from the cream, you have to put it in a pan and cook it till the ghee comes out.

First of all, put the cream in a big pot and leave it to melt. Keep the cream on low heat. After a while, the ghee will start separating from the cream. Keep stirring with a spoon throughout this process so that it does not stick to the bottom of the pot.

For granulated ghee, add less than a pinch of salt. Now turn off the gas and sieve the ghee in another vessel with the help of a sieve. Pure ghee is ready.

If you make ghee by collecting cream in 15-16 days, then the ghee will turn out better. That thing will not come in the old cream.

Second method: Making butter from cream and extracting ghee

Making butter from cream takes less time to extract ghee and more ghee is also made. If you are adopting this process, then first put the cream in the mixer. After putting the cream in the mixer, add some ice cubes and water to it. Now start the mixer.

By whipping the cream in the mixer, you will see that the butter separates easily from that cream. Now the process of making ghee from this butter will start.

Put butter in a pan and heat it.

Keep in mind that do not throw away the water leftover from the cream, but use it as water for making gravy, making lentils, or rice.

Keep stirring the butter kept in the pan with the help of a spoon. Ghee will separate from butter after some time. Now turn off the gas and filter it when it cools down. Pure ghee is ready.

Ghee can also be removed from the remaining shreds after filtering. To do this, put the remaining burnt cream in the pan again, add 2 glasses of water and let it come to a boil. Ghee comes out of the cream and starts floating in the water. Now keep it in the fridge for 3-4 hours, after that take out the ghee that has been frozen in the vessel by cutting it from the edge with a knife. Ghee comes out after taking this process for the second time also.

Ragi Flour: Make Healthy and Tasty Dishes

Nowadays people use a variety of foods and weight loss products to lose weight. 

It may or may not benefit them, but it costs a lot of money and spoils their mind. If this is happening to you also, then you should use nachni flour. It is also called Nachni or Finger Millet. Dancing flour is a very healthy option that is rich in nutrients.

It is rich in fiber, calcium, protein, vitamins, potassium, and iron. Eating nachni helps in weight loss and people suffering from diabetes and iron deficiency should eat nachni flour. 

Below are some recipes that you can make that are as delicious as they are healthy.

Ragi Idli 

This idli is as delicious as it is nutritious. It is made by mixing nachni flour, rice, and urad dal. It is also very easy to make.

Ingredients of Nachni Idli-

1 cup idli rice

cup uddi dal

1/4 cup poha or 20 to 25 grams rice

tablespoon fenugreek seeds

1 cup nachni flour

Water

rock salt as per taste

Nachni Idli food-

First of all, put the rice in a vessel and wash it well. Then add 1 to 1.5 cups of water and keep it aside.

Now wash and mix well, cover, and leave for 4 to 5 hours.

In another bowl add urad dal and fenugreek seeds.

Wash the pulses twice and soak 2 fenugreek seeds in 1 cup of water for 4 to 5 hours.

After about 4 to 5 hours, put the urad dal in the grinder box.

Finely chop the urad dal and fenugreek seeds till they become soft and smooth.

Add some water while grinding. Then take out the urad dal paste from the pan.

Peel a squash, grate it and squeeze out the juice.

Add some water while grinding.

Put the rice paste in the box containing the urad dal paste.

Then mix both the batteries well.

Now add 1 cup of all-purpose flour and half a cup of water to it.

Now mix well with a spoon or by hand.

It takes some effort to mix the Nachni flour in the Idli pot.

Cover the cup with a lid and let it rise overnight or for 8 to 9 hours.

You will see that the amount of battery will double.

If the quantity of flour is not increasing, then add one teaspoon of baking soda to the flour.

mix well. Add salt.

Now take the idli mold and grease it with oil.

Pour all-purpose flour into the idli mold and add 2 to 2.5 cups of water to the electric cooker or steamer or pressure cooker before placing the idli stand.

Boil this water and place the mold in an electric cooker or steamer and cover it with a lid.

Cook the idlis in steam for 12 to 15 minutes.

Meanwhile, keep checking the idlis. You test it with a toothpick. It should be clean and not sticky.

Angry idlis can be boiled in batches.

Serve idli with coconut chutney and sambar.

Can also be given to babies with a mixture of coconut milk and jaggery.

Ragi Dosa

Ragi dosa is actually a healthy variation of dhosa, which can be made with the help of ragi flour. This is a quick recipe.

Ingredients of Ragi Dosa-

1 cup ragi flour

1/4 cup gram flour or rice flour

cup finely chopped onion

tsp finely chopped ginger

tsp chopped green chilies

8 to 10 curry leaves - chopped

chopped coriander

tsp cumin

1 pinch asafoetida - optional

3 tbsp fresh grated coconut

Half a cup of buttermilk

1.5 cups water or as required

salt as required

Oil or Ghee for cooking as required

Method of Ragi Dosa-

Take ragi flour and gram flour in a bowl. You can also use rice flour instead of gram flour.

Now add finely chopped onion, ginger, curry leaves, green chilies, coriander leaves, asafoetida, cumin, grated coconut, and salt as per taste.

Also, add buttermilk and 1.5 cups of water to it.

Mix the batter very well.

Cover the batter and keep it for 15-20 minutes.

After this, heat a tawa or wok on medium heat. Put some oil on the pan.

Now take some batter in a ladle and spread it on the pan.

Now let the base cook so that it becomes crispy.

Now, sprinkle some oil on top. Also, sprinkle a few drops of oil on the sides of the dosa as well.

When the dosa turns golden and crisp from the bottom, flip it and cook from the other side as well.

Cook till crisp and well cooked from both sides. Similarly, make all the dosas.

Serve the dosa hot.

If you want, you can also make masala dosa by adding potato masala or dry vegetables to it.

Serve it with sambar or coconut chutney.

coriander leaves for garnishing

Method of Besan Dhokla-

Blend gram flour and curd in some high temp water in a bowl. 

Blend it well so that no irregularities stay in it.

Now add salt to it and let it ferment for four hours.

Now, add turmeric and green chili-ginger paste and mix it.

Now heat the steamer and grease the plate lightly with oil.

In a small bowl, combine baking soda, lemon juice, and a teaspoon of oil.

Pour this mixture into the prepared batter and whisk well.

Put this mixture on a plate and keep it in the steamer.

Cover with a lid and let the steamer cook for ten minutes or till the dhoklas are cooked well.

When it chills off, cut it into square pieces.

Now it's time to prepare the tempering.

For this, heat oil in a tadka pan and crackle mustard seeds. Also, add green chilies to it.

Now add some water to it and pour it over the dhokla.

Ingredients of Besan Toast-

1/2 large finely chopped onion

1/2 cup besan

salt to taste

water as required

Oil

finely chopped tomatoes

finely chopped green capsicum

finely chopped coriander leaves

1/2 tsp ginger garlic paste

red chili powder as per taste

1/4 tsp garam masala powder

1/8 tsp turmeric

How to make Besan Toast-

Besan toast is very easy to make. For this, first, take a mixing bowl.

Mix gram flour, onion, capsicum, tomato, red chili powder, green coriander, ginger-garlic paste, garam masala, turmeric, and salt in this bowl.

Now add some water to it so that a smooth batter is made.

However, keep in mind that the consistency of the batter should be such that it coats the vegetables and should not be too runny.

Plunge a couple of cuts of bread in the player.

Now, heat the pan on a medium flame and carefully place the bread with a spoon.

A quarter cup of gram flour

Method to make Besan Roti-

First of all, put wheat flour, gram flour, and salt in a vessel and mix it well with your hands.

Now add little water to it and knead soft dough.

Place a wet cloth over it and let it rest for 15-20 minutes.
